Bright, Bright White
While some restaurants allow their kitchen staff to wear more unique uniforms, a simple white coat is the most common. This is the case for two reasons: first, white is a reflective color. Rather than absorbing the heat from a propane stove, white will actually repel it. Second, there is a better chance of removing tough stains if the chef jacket is able to be bleached. In addition to stain removers, using bleach on a chef jacket can make it look good as new.
Double-Breasted Jacket
This feature is particularly helpful for the rare times that a chef is able to step out from the kitchen. The double-breasted front of a chef coat is also lined with symmetrical buttons. This allows the chef to reverse the outer-most layer and therefore hide stains that are picked-up behind kitchen doors.
Toque Blanche (white hat)
Not only does a hat keep sweat and hair out of the food, it also functions as a sophisticated ventilation system. The height of the white hat allows for heat ventilation and air circulation, keeping the chef’s head cool.
Layered Cotton
Quality chef jackets are made with two layers of cotton and are often fire resistant. The durability of the fabric protects chef’s from wild flames, sharp objects, and oil splatter. Furthermore, chefs are trained to quickly remove their jackets in the case of a hot oil spill because the jacket’s material absorbs hot liquid instead of allowing it to pass through to the skin.
